Ham for the Holiday


  • Serves 12
  • Preheat oven to 325 degrees
  • 3 tablespoons olive oil
  • 1 onion, sliced
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • Freshly ground black pepper to taste
  • 4 cups white wine
  • 1 bay leaf
  • 5 whole cloves
  • One 5 to 6 pound boneless ham
  • 1/2 cup confectioners’ sugar


  1. In large nonreactive pot, heat olive oil over medium heat. Add vegetables; sauté until golden.
  2. Place ham atop vegetables. Add wine and enough water to cover half the ham. Add pepper, bay leaf, and cloves. Bring to simmer.
  3. Cover pot and place in preheated oven. Bake for 2 hours; turn ham after first hour.
  4. Remove ham from pot. Increase oven temperature to 450 degrees. Reserve cooking liquid. Place ham on rack in shallow roasting pan. Sprinkle ham with confectioners’ sugar. Bake for 10 to 12 minutes until nicely glazed. Allow ham to rest, lightly covered with foil, for 20 minutes before slicing.
  5. (Use reserved cooking liquid to make split pea or vegetable soup. Add any leftover ham to soup.)
